We're Proud of Our Process.
Sur del Lago is one of the oldest and WILDEST regions growing cacao in the world. Located in northwestern Venezuela, these tropical lowlands offer the perfect climate for farmers to cultivate the highest quality cacao.
Our organic, small batch cacao, named after the region, Sur Del Lago, is known for its mellowed, mature and spicy flavor and is harvested from Criollo and Trinitario trees. Due to the mixing of these trees, our cacao has a very smooth, hearty and beautifully rounded chocolate flavor. It’s full bodied and robust, including complex flavors of butter, hazelnuts and almonds, with a subtle aroma of berries. It is a fine and delicate bean with low levels of acidity and astringency.
You may also pick up floral nuances and the cacao flavor might have a very brief and bitter peak at end of the tasting.
